What is Pure Kojic Acid?

Pure Kojic Acid, also known as kojic acid and juic acid, is an organic acid with antibacterial effect produced by aerobic fermentation of glucose by Aspergillus candida at 30-32 °C. Its molecular structure is a substituted γ-pyrone. Among the γ-pyrone compounds that exist in nature, the only well-known compounds are kojic acid and maltol. In 1907, Saito isolated kojic acid crystals from rice koji. It was named by Yabuta in 1912 and its structure was determined in 1924. In 1953 Arnstela (surface fermentation) and Kita Makoto (submerged fermentation) in 1971 used isotope tracing technology to prove that kojic acid was formed by direct oxidation and dehydration of glucose without carbon frame fracture.

Pure Kojic Acid Uses

Pure Kojic Acid has the potential to develop into a new type of food additive. Its performance as a food preservative is more ideal than that of sorbic acid. Pure Kojic Acid can be used for the preservation of fresh vegetables, fruits, seafood, etc. For example, soaking cut apples, bananas, potatoes and mushrooms in 0.1% kojic acid solution for about 1 hour can effectively prevent browning. Crab meat, shrimp meat and other seafood are treated with 0.25% to 0.6% kojic acid and 0.1% sodium sulfite solution by spraying or soaking methods to treat vegetables that are easily spoiled and deteriorated such as mushrooms and spinach.
